It all started in November 1972 when Mr. J.K. Kapur fired up Copper Chimney’s first tandoor. Ever since, we serve slow-cooked dishes that once belonged to courts and campfires across undivided North India from Peshawar to Delhi. Using his philosophy, our ustads cook out of passion, not as a profession. So, every morning we start over so that there is nothing left over. We grind our spices at the crack of dawn every day and make our curries from scratch to serve each order. Our kebabs are marinated for over six hours, and then grilled to smoky perfection to melt in your mouth. Every day, our tandoors are fired at first light and our dals are slow cooked overnight so they satiate by noon. Our masalas are so secret that not one spice of the 17 knows the other, as they go through a six-hour grind. Our story is our taste; our secret recipes are our lineage.
